@Daniel-San I basically make a tare (https://en.wikipedia.org/wiki/Tare_sauce) using soy, mirin, sake and brown sugar, but don't cook it out to a sauce-like consistency; but leave it loose. Add spring onions and shichimi togarashi whilst it cools, then marinade the steaks in that. Once the steaks come out the marinade, I cook the sauce down to a glaze then stir it through the sliced meat

For my own part, I know that once my 21oz 888s are ready to go into semi-retirement, I'm keen to try something from the XHS range next, rather than come back for another pair of 21oz.
So maybe just thinking of myself, but possibly because when people discover IH they want the 'IH signature' 21oz denim rather than its variants? And when they come back for another pair, they want to try something in a different denim entirely?
Presumably data from the order in which repeat customers buy different things could shed light on purchasing patterns.
