@Alex and I popped down to the brewery tonight (well there was a D and a Y in the day), we discussed the 10 year anny brew.
It will happen. We can use the pilot brewhouse (which make a 100 litres or so - so. prob not big enough ).
Need to decide on the beer, but it will def happen.
We'll cask/keg some, and bottle the rest.
Also agreed that we will document the shit out of the whole process.

I liked your idea earlier of an indigo beer. heck, if companies can make green beer for St. Paddy's day then indigo colored beer shouldn't be a problem. Make it blueberry flavored

I liked your idea earlier of an indigo beer
This is a concept I've toyed around with on paper for a few years. The challenge with indigo is some varieties of the plant have compounds that can be toxic to humans in even small quantities. There are one or two varieties that would work well though…
Blue is also a deceptively difficult color to get in beer through natural means. Things of blue color tend to be basic in nature (pH greater than 7) where as beer is acidic (average pH ~5). Had an idea for a beer involving blue kool-aid once though, and that would have definitely been a vibrant blue...
