The vertical fades on this denim are nice. Took these before their first hot hand wash. They pop a little more now

To echo what a few others have said, I sized down from my typical IH tee size of L to a M for this. The end result is a similar fit and I'm happy with that decision. The neck hole is definitely a bit snug, though not uncomfortable. The outside of the shirt is not out of the ordinary from what I would expect, but the inside is altogether different.
This is over a 7.5oz tee. I'm 5'9" and it hits right at my waistband.
The fabric has a rustic feel with plenty of texture.
It will depend, at least in part, on how you want to wear it. I'm almost always between large and medium in IH shirts. I usually go M in work shirts and L in westerns depending on the measurements. That said, I went M in this and it's a trim fit which is traditional for a rider. A UHF under this is pushing the limits but doable if I'm wearing it zipped up. Unzipped is not a problem. If you want a more relaxed fit, or if you need/want more length in the sleeves or body then you may want to size up. I hope that's helpful.
I couldn't make it Friday for the party, but was able to stop in today. Great shop with tons of awesome stuff run by friendly people. The leather jacket racks are dangerous! Chatted about hairline duck (92, good memory @Matt!), and got a T-shirt. The collab blanket is great and the leather and 21oz roll is a nice touch. Unfortunately I couldn't stay to visit the event down the street. The food smelled delicious!

My apron is still stiff, but I would expect it to eventually soften as 21oz is known to do. Even so, I haven't found it restrictive while cooking. I can see it getting hot if you're out in high temps with blazing sun standing close to a grill. Wabash might make more sense in that situation.
Spenco are a nice option with various models with different level of cushioning.
This is not making my decision any easier!!
How does this fabric compare to the 21s? It looks like this may have a white weft vs the unbleached of 21s. Does this get as soft and stretch as much as 21s? It's headed my way regardless, but I appreciate any input!
I have a pair in 888 that I've been wearing to work for the past 6 months or so. They may have softened slightly, but they are still very stiff. They've definitely molded to me, so they are much more comfortable now. For a while, the chainstitch inside the waistband was rough on my hip area. That has gotten much better. That said, I don't anticipate these ever reaching denim sweat pants level. Not even close.

Just FYI, I've had success adding Vital Wheat Gluten to all purpose flour to boost the protein content. There's a good calculator around somewhere online that was a tremendous help in determining how much to add. I mostly went this route to simplify how many types of flour I had piled up in the pantry. It was getting out of control, ha ha!
