TJ, not sure how pressed for time you are, or if St. Louis has to be in your itinerary? But, that Kansas leg is hellishly boring. I'd drop through New Mexico and Texas. Tons of great scenery. Kansas is literally hour after hour of this:

I've done this drive, the Midwest sucks shit regardless of the state. Def go through the south and avoid Georgia at all costs, I'm not a fan (used live in the shithole metropolis known as ATL). Once you get to Memphis (lived there too), its all awesomeness to FL, if you take said route. If you need any assistance planning let me know. Not trying to brag but I've been to all of the lower 48 states, tons and tons of driving….

congrats mate! do be sure to swing by take5 at TST to have a look but their prices at times can be a little on the high side. and if you're adventurous, try the local HK food. its awesome! (at least for my asian taste buds)
they've got dim sum (mostly steamed food in small portions so you can try many different dishes) or their roasted stuffs like pigeon, goose, duck and pork. also their street food like curry fishballs (not spicy actually so don't be afraid), gai dan zai a.k.a chicken egg balls in cantonese (its just like egg waffles in a cluster packed egg-shaped waffle). well these are just suggestions to help make your trip interesting by trying their local food.
if you need more directions i'd gladly ask my relatives there for the address of restaurants and shops thats popular for those food mentioned.
