I'm impressed by your Don Foggs. Is he still around?
Don Fogg is my favorite maker and I am lucky to have a number of his pieces. He is retired. He posts on Facebook from time to time. He appears to be well. I haven't spoken with him recently.
We've been using our Ken Onion Shun for 7 ish years, been holding up great. We're pretty abusive with it too.
I use mostly a Kramer-designed (but not custom) knife in 52100 carbon steel. I'd like a custom though. There is a guy close to me who makes beautiful pieces but they're beyond my price range for a user knife. Check him out: https://www.maumasifirearts.com

About ten years ago I was at Blade show, and it came up in the conversation a lot of the heat and beat guys were having a lot of health issues. Don was someone that came up. Glad to hear he's still kicking.
As much as I like nice things (I have two giraffe bone handled long knives/short swords from Jerry Hossom), I have a hard time justifying a high end kitchen knife. My kitchen knives get put away wet, tossed in the steel sink, banged against stuff, dropped on the floor (it's amazing I still have all my toes), and used to pry.
I don't even mind damaging the knife, it's just such a pain in the ass to get a custom piece repaired when you break a tip off.

Hinderer Knives UK legal xm-18 'slippy' slicer. OD green.
Really wanted a Hinderer for ages but couldn't justify it previously as they did not do one that was legal to carry in the UK. Now they do!
Superb build quality. It is a bit stiff to open one handed using the thumb disc but Im too lazy to fuck around with it to adjust….
Love the fact that they do alternative scales, clips, tab fillers that you can buy in order to customise.
Heard some negative reviews about Hinderer but I'm pleased with it.
