Mine too I did a lot and I think i narrowed it down to these two for my next Order (not 100% Shure if I want to go with the "Two-Tone" again) with a 2021, a 700 or a 100 Vibram Sole, Choices, Choices.
I don’t know how much the climate varies in the course of a year where you are, but I let practical matters guide me in my choice of soles and leather, to an extent. My first pair were oil-tanned leather with the #425 for winter (which lasts five to six months for me). I would have gone with the #100 for max grip but it’s a little too gnarly for the MP toe in my opinion. #425 was the middle way.
I went for the #705 on my summer pair which are lightweight burlap.
I’m not a big fan of wedge soles at all and the ripples on the #2021 will wear out quickly in an urban environment. So you may want to consider that. Both the #100 and #700 are very hard wearing but are on opposite ends of the scale when it comes to profile and traction. The #100 are totally badass on JM’s though so if you wanted to go all out BOOT then I’d go for that with a double midsole.

Do you mean #430 aka the "mini lug"? This reminds me, there's also the Vibram #2724 (or #435) "mini lug half sole" which, like the description suggests, is the love child of #430 and #705 and would probably be the best overall choice for fans of uninterrupted heel stacks and sleek looks, who also want their soles to perform when the going gets slippery.

Usually I prefer the uninterrupted Heel Stack, my RW Blacksmiths are at the moment at the Cobbler to get the Dr Sole Half Sole + Double Midsole Style done but on a Winter Boot I tend to prefer not to have the exposed Leather undernath the Boot.
I can get behind that, half-soles look good and perform adequately for 3 seasons out of 4, but I wouldn't like to face the winter armed with half-sole boots only. #100 gets lots of stick for the looks but they perform (and I like the looks too).

Ha yea try doing a custom last and waiting god knows how long. I’ve had to look up breathing exercises.

Those are fantastic! What are they? I'm a Wesco noob.
They look like custom Boss in burgundy or maybe brown domain, on double midsoles with the Vibram #100 outsole. It may be the bump toe last rather than the standard Boss last. The major custom mod appear to be no instep or shaft straps. They do look very nice indeed.

I’m at 10.5 weeks (not that I’m counting) for my custom Jobmasters with packer upper stitching. Shouldn’t be too much longer.
