Zombie poolish looks fun though @goosehd. Baking fuck ups are often amusing and galling in equal measures. If I fuck up this bulk fermented overnight focaccia dough I’ll be sad though.
I also have two poolish mixes proofing. Plain white in the bannetons, a little bit of whole meal and rye blended in the tins.

Forkish really changed my approach to baking bread @goosehd good choiceThank you so much! I just use whichever Forkish pizza dough recipe that fits my schedule, but i think the overnight straight pizza dough is my favourite. It is so good to have it the fridge as it can be taken out and made in 30min. It makes any meal into a feast.

anyone experimented with baking from a cold oven?
The two loaves posted above had one started in a stone cold dutch oven inside a cold oven and the other one was baked in the hot dutch oven and oven after the 1st came out of the dutch oven. Really couldnt tell much difference and saved nearly ~45minutes of time not needing to wait for an initial preheat.
