Looking at the picture, the beds are dipping more steeply on the left side of the picture. From the picture, the rock appears to be volcanic deposits. Ash, tuff, possible basalt flow above the thick pink deposit.
The undulating appearance is caused by the topography of the area. Dipping layers are eroded into valleys and ridges. without the ridges and valleys, the dipping strata would appear straight from this view.
It would be great to visit that area.

When I was in Madeira in September, they had the same landscape. It was also formed by a volcano.
