@Mizmazzle That's just common sense. Anyone who lives in CO or SoCal understands proper burrito etiquette. Take a bite, pour a little sauce on the next bite, and repeat.

i think he's permanently closed now, but there used to be a guy that would throw a handful of cheese on a griddle, make it crispy on one side, and then wrap the grilled burrito in it. I think something like lowrider burrito in socal? Forget exactly. It was one of the most perfect breakfast burritos ive had. Especially the ones he'd throw jalapenos in the cheese...

@pechelman That actually sounds pretty bomb. There's a place near me that does a layer of cheese between two tortillas, and those tortillas end up being the wrap for the burrito. It never ceases to amaze me where humans are able to hide more cheese in popular food items.

I was thinking about making cheese skirts and laying them over smashed patties yesterday. Perhaps I’m flying too close to the sun on that one.

@pechelman I do something similarly decadent and ridiculous: griddle a burrito, flip and while griddling the other side create a cheese skirt, then optionally dump chili on it.

@mclaincausey It's other-worldly, but kind of deadly. I tried it once and really enjoyed eating it, but it was too much. Might be a good burrito to split with someone.
Cheese skirts on smashed patties sounds pretty amazing. Might have to try it once, for science.

I make a mean smash burger on my stainless steel griddle insert. It’s called a Little Griddle. The one I got takes up all but about a 2” on all sides of the grill surface. They make different sizes. Why buy a Blackstone griddle when you can make your gas grill convertible?

Potato bun, grilled onions, house made dill pickles, American cheese, and I opt for their gold sauce (buffalo and honey mustard mixed) and sometimes grilled jalapeño. I’ve not found the bacon to be necessary. They also do Oklahoma style (onions smashed into the patty) but I prefer their gold sauce other way.
Best burger on the planet.
And if it’s not obvious I am firmly on team cheese for burgers. Especially if it’s processed American cheese so it melts artificially well.

@mclaincausey You had me at Gold Sauce. I've never heard of this, but it instantly resonated with me. That burger sounds so fucking good.
I like a nice cheddar cheese on a burger, but I love American cheese. Nothing melts better or pairs so perfectly.

this. precisely. Though I'm not elitist in this. I wont turn down a cheeseburger but 9/10 i'm ordering one without cheese.
I like my burger simple as well. Buttered, griddle bun, mayo, onions (preferably grilled), pickles, burger.

I’d disagree with that; smothered burritos are different. For starters, flour versus corn tortillas. In fact my favorite style of enchiladas (from the north of your state Matt) is just stacks of corn tortillas with some kind of stew like adobada between them, no wrapping of any kind. You could call that lasagna if you wanted.
I like my burgers simple too. Save the fancy burgers. Dill pickles, grilled onions, mustard (or gold sauce), and cheese for me please. I can appreciate fancy burgers but they always disappoint relative to a white trash griddled burger.
