Generally speaking Haraki-san is strict on that. Work shirts have buttons, westerns have snaps. There have been exceptions, notably work shirt CPO’s, and the quasi-legendary IHSH-91.
More recently a run of denim work shirts a la the IHSH-75 were announced with snaps. That was a case of something being broken and needing fixing though. The 12oz denim was proving difficult stuff to create quality buttonholes in. The point being it isn’t as unlikely as it may have been a few years ago.
On the other hand, there’s always the IHSH-13 of course.

If mechanic's shirts are considered a category of work shirt, there's a long history of snaps on IH ones there, and I don't think (easily could be wrong) that snaps are any more traditional on that style of shirt than buttons would be. So, adding to the hope that there are more 91s in the future. Snaps IMO are much more functional than buttons but sometimes you want a work shirt and not a western. I know that salability is just one factor in the calculus, but I think snap long- and short-sleeved work shirts in classic fabrics like denim, herringbone/prison stripe, wabash, hickory stripe, west point twill, swedish serge, and chambray would certainly sell.

Does anyone size down on these compared to their UHF workshirt size? I'm an XL in the UHF workshirts but I'm thinking I should go for an L in this one.

Just got mine in! Kudos to the IH team for getting this from UK to US in 3 days. Lovely shirt! The large fits like a slim large. For ref 6’2, 185lbs.
Congrats, classic shirt. The IH shipping is crazy good for most destinations and especially to the US.
Word to the wise… comparing IH sizes to pre-conceived ideas about standard sizing is a waste of energy. There is no standard sizing. Measurements are key.
