Another BBQ at HQ today. Alex has been preparing the joints of pork yesterday and up at the crack of dawn to get the Kamodo Joe fired up and at ambient temp. While he is in Japanese I am tasked with ensuring the ambient temp doesn’t drastically drop or it’s hands at stations. We take our meat seriously here so this is my work station while on duty…

I love slow cooked pork the day of, but leftover pulled pork cooked crispy with scrambled eggs and pickled onions is one of my top 5 favorite meals.
