There was the addition of the extra windproof liner in between the wool and outer shell a few years back.
Our N1's have always had an additional windproof liner. We just did not brag about it in the early days because H thought it unimportant to point out......

At the risk of asking a too general question: Are the newer Iron Heart products (jeans, knits and sweats, jackets etc.) of an obviously superior construction and material quality than the earlier products?

Most of the fabrics will be effectively the same, there may be some tweaks as we try to improve, and there may be subtle variances as raw materials become unavailable and we have to source alternatives.
Regarding cut and constructional detail, Haraki is always tweaking/trying to improve, but typically a change will result in the lot number changing.
Whether those tweaks are good or bad is really in the eye of the beholder, because Haraki rarely considers what other people will like, just what he thinks is best for him personally.

We default to yellow as that is the colour of the original constructional stitching. But you can request any colour you want.

I’m looking for a straight leg with a very slight taper which the 634s looks like it has but I’m not sure if it would actually fit my body (175cm and 77kg) well. For reference, here are my Sassafras Fall Leaf denim. They are (relatively speaking) my best fitting pair of denim. Below are their measurements
Waist: 95.6cm/ 37.64in
Front rise: 31cm/ 12.2in
Back rise: 41cm /16.14in
Thigh: 33.5cm / 13.9in
Knee: 26.67cm/ 10.5in
Inseam: 73.5cm / 28.94in
Leg opening: 24.3cm/ 9.5in -

They'll be able to recommend the perfect cut/size for you using the measurement you've provided.

I can only give you my personal opinion, but I’d say this cut works well on a wide variety of body types.
I’m what some would call tall and skinny (I prefer to say thin lol). Not much of a butt, but fairly average sized waist and thighs. I know that doesn’t speak directly to your specifics, but just giving you a body type to compare to …
The 634 is my favorite cut.

@T4920 gave you the best advice though; email the team. The customer service here is second to none and they'd be happy to help you find the best cut for you.
You mentioned that for Sassafras jeans are your "relatively speaking best fitting pair". When you email the IH team with your measurements, I recommend that you point out anything that you like/dislike about that pair of jeans (e.g. "the thighs are a little tight" or "I'm looking for something with a bit more room in the butt" or "I'd like less of a taper" or whatever) so that they can advise on how that pair will compare to the IH cuts.

I've never actually reached out for specific sizing advice, just kinda winged it, but should really take advantage of their expertise...

Why are the sleeves on the IH Horsehide Type III truckers so long vs the Rider's?
I've had a terrible track record over the past 20 years ordering leather jackets online (the local selection is awful) either new or used. I've probably gone through 10 jackets and only one (a custom Schott 42 Long that I waited 6 months for) fit. Everything else was either too short in the sleeves (size large) or too large in the body (XL) and even then the sleeves could be short. The majority of new Schott jackets can't be custom ordered in long sizes so I didn't have many options. I'm 6'1, 185 lbs and take a 35/36 inch sleeve in dress shirts.
A few days ago, I popped into a local clothing store a few blocks away (Brooklyn Clothiers) and saw the Iron Heart black Horsehide leather trucker jacket. It was a size 42 which was described as an XL. I immediately assumed it would be too big in the body and too short in the sleeves. To my delight, the sleeves were perfect and the XL body fit like a Schott Large. I bought the jacket and started looking for other Iron Heart jackets that might work for me.
The horsehide riders jacket with a collar is really something I would like. However, when looking up the specs online, the XL size has a 26.8 sleeve vs the Type III with a 28 inch sleeve. I suspect this 1.2 inches in different could make them too short for me.
Any reason why the Type III seems to have a longer sleeve length vs the rest of the leather jackets?
I did notice that a store in Canada (The Shop in Vancouver) has a brown split steerhide Type III in an XL in stock and that one has a 27.9 sleeve. I'm quite tempted to order that one but I'm not sure how that type of leather with the suede will wear over time.

@jdixon1974 to answer your initial question, different iterations of jackets have different dims. Just the way it is. Examine the shoulder measurements and you may find an answer there. Where the sleeve hem ends up on your wrist is also dependent on where the shoulder starts.
However, where are you getting your dims from?in order to have a reliable benchmark you should always get measurements from the IH website, and compare them to the measurements of the jacket you own. You may find them closer than you think.
As for the split steer type III, I own it and it ages beautifully. Just gets softer and softer. Doesn’t get the same patina as a regular steerhide/horsehide jacket, but does end up buttery soft and pliable.
